Chicken Enchilada Lasagna in the Instant Pot


Made this for the hubster for dinner tonight.  So much fun cooking in the Instant Pot.  I baked the chicken ahead of time, shredded it with the hand mixer and then the prep AND the cook time was less than 30 minutes.  Next time I'll jazz it up a little more with cumin or chili powder.  It was a little on the bland side.
