Enchilada Sauce

I'm at the point where I don't even care what I make anymore or how it tastes.  Right now it's all about how many zucchinis the recipe uses up, how many tomatoes the recipe can make disappear and can this stuff be moved out of the kitchen before the fruit flies discover it. :)  I've gone over 100 jars so far. Hoping to find a recipe to use up more pickling cucumbers that requires it to sit in the fridge overnight before canning.  I could use a break :)
