Zucchini Salsa

I have to make this every year.  Did not put up enough last year to make it through the entire winter and spring so this year I've been made to promise I will not give any away.  Yeah right :)  Someone in this house is getting a little possessive about his salsa :)  It's a two day process...it has to sit in the fridge overnight doing its thing and then you can finish the seasoning, cooking and processing the next day.  I put a second batch to sit in the fridge last night....so batch #2 will be done tomorrow.
