Chicken and Fruit Curry




















Another recipe from the "Real Irish Food" cookbook by David Bowers.  Really really good.  I made a few changes.  I didn't use fresh peaches.  Instead I used a 14.5 oz can of peach halves (strained), garlic in a jar instead of fresh and ground ginger as opposed to cutting up fresh. (Are you seeing a pattern here?" :)) I also used a mild curry paste.

And to the person who said to me she didn't think the Irish had any good recipes and that she considered Irish food "at the lower end of the spectrum":  If you are reading this, this recipe is proof to the contrary. It was pretty quick and easy because hey who has time to cook in between getting drunk, picking fights and dancing the jig.
