Pumpkin-ricotta stuffed shells

Made this tonight. It was easy and really good.  The hardest part was finding canned pumpkin puree in the grocery store.  Apparently the flooding and rain in the midwest this summer has affected the pumpkin crop. At least that's what the cashier told me.  Who knew?  As usual, I substitute dried herbs for fresh.  I don't need anything else going bad in my fridge before we get to it.
