Taco Stuffed Potatoes
4 baking potatoes 6 ounces each (I used two really big ones and just baked them longer)
8 ounces of ground beef (I used a lb. and will figure out something to do with the leftover meat)
1/2 package of taco seasoning mix
1/2 cup of water
1 cup diced tomatoes
1/4 t. salt (oops I forgot that)
2 cups shredded lettuce
1/2 cup shredded sharp cheddar cheese
chopped green onions
1. Microwave potatoes for approx. 6 to 7 minutes on high (I used the regular oven).
2. Brown beef in a large skillet over medium high heat breaking up the meat. Drain fat. Add seasoning mix and water. Stir to blend and cook for an addition minute until no longer pink. Remove from heat.
3. Toss tomatoes in a small bowl with salt. (I didn't do this)
4. Split the potatoes almost in half and fluff with a fork. Fill with beef. Top with tomatoes, lettuce, cheese and green onions. Top off with sour cream.
