Irish Soda Bread

3 cups of flour
3 tsp. baking powder
1 tsp. salt
1 cup milk
2/3 sugar
1 cup raisins
1 handful of caraway seeds
3 eggs
1 tablespoon melted butter (I use slightly more)

Sift flour, baking powder, salt and sugar together.
Add raisins and caraway seeds.
Beat eggs in another bowl. Add melted butter and mix well.
Add to flour mixture and mix.
Bake in a loaf pan or oven proof bowl that has been well greased and sprinkled with flour.
Bake 325 degrees for 45 minutes or until done. (My oven always takes longer.)Test with a knife to see if it comes out dry. If you rap it and it sounds hollow, it's done.
