Irish Farmhouse Bake Recipe

Really good breakfast dish for when you have people staying over.   Like most recipes, I double it. From Clare Connery's book "Irish Food and Folklore"  Here's the picture from the book.
1/4 cup of butter
8 slices smoked Canadian bacon
1 large onion finely chopped
4 oz. mushrooms sliced
6 potatoes, boiled
1 T. chopped parsley
2/3 cup heavy cream
4 oz. farmhouse cheddar grated
salt and pepper to taste

Melt half the butter in a pan and fry the bacon until cooked and beginning to brown.
Remove from the pan and fry the onion and mushrooms until cooked and beginning to color.
Cut the potatoes into wedges and arrage with the fried bacon, mushrooms and onions into an oval 1 quart ovenproof dish. 
Season with salt and pepper and add the parsley. 
Pour in the cream and cover with the grated cheese. 
Bake in a preheated oven for 20 to 30 minutes until crispy and golden on top and very hot.

The next recipe of hers that I want to make is the Squab, Steak and Mushroom Pie.  As soon as I figure out where to by a squab in southern Maryland :)
