Dice 5 lbs. of peeled cored apples into small pieces.
Mix 2 cups of brown sugar, 1 t. vanilla, 2 t. ground cinnamon,
and 1/4 t. of ground cloves.
Add mixture to the diced apples and mix well.
Cook in crock pot for one hour on high covered.
Reduce to low heat and cook for 9 to 11 hours.
Stir more frequently as the mixture thickens to prevent sticking.
Uncover and cook for another hour on low.
If desired, stir with a wire whick until smooth.
Freeze or refrigerate.
